batter hits a pop up near 3rd base line and the ball begins to drift toward the coaches box, the 3B coach is back pedaling trying to get out of the fielders way but the fielder chasing after the ball bumps into him and doesn't make the catch, would this be interference or just incidental contact since the 3B coach was definitely trying to get out of his way?

If the fielder could have made the catch, then it’d be interference. The batter would be called out. Intent is irrelevant, the coach can’t hinder the defense from catching a fly ball.
This is different from a thrown ball hitting a base coach. In that case, the interference must be intentional.
