Any thoughts on making the plate and mat a strike? I know we haven't played that way in the past. I was just thinking it gets kinda windy out there for this. And it's easier for the umps to call if it hits any plastic at all.

There is still a 6-10' limit. It's pretty tough to keep the pitch under 10' and go over somebody's head and still hit the mat. Unless you stand in front of the plate.

There is an open field to the south of the fields between the fields and a parking lot. If you hit there though, please make sure you're not aiming to put balls into one of the fields and please be aware of people walking from the parking lots to the fields.
